Meet our pitmaster, Big Lou Elrose
Big Lou took up barbeque when he retired from the NYPD motorcycle unit in 2008. He went pro after winning several amateur competitions, such as 1st place pork American Royal. Now he's our top pitmaster, in charge of all handing, grilling, and smoking at Wildwood.
Big Lou's philosophy on barbeque is simple: "Always start with a good cut of meat. Make sure there is enough fat in the meat so it doesn’t dry out when cooking for a prolonged amount of time, make a great rub and follow up with a great BBQ sauce. And always cook Low and Slow using wood"
But, smoker or no smoker, he's never going to ditch his chopper. When we opened Wildwood in St. Pete Beach, Big Lou christened the smoker there with a log from New York that he rode down the East Coast on his bike. Eater.com kept track of his trek.
